Food, Photography, & Hiking in NC

Summertime…the beginning of vacations, a social life, and relaxation. I almost forgot what it was like to have friends and free time because I was so busy during the school year. It’s like a breath of fresh air and good for the soul to be able to spend quality time with my gal pals.

It’s rare that I’ve been home and able to go and do things like I have these last couple of weeks of June. Just last week alone, I hiked 7.2 miles and biked 6+ miles. These days remind me of my time back in Italy and it makes me so much more excited to be there. I miss the days of biking around everywhere and hiking each and every day. The healthy lifestyle there is one of the things I’m looking forward to the most.

On Monday, my college friend Brittany and I hiked to Moore’s Knob at Hanging Rock State Park, located near King, North Carolina. We started at the Visitor Center and followed about 3 different trails along the hike until we got to Moore’s Knob. Being a Monday, it was not crowded at all, which was extremely nice and peaceful. This hike isn’t for the slight though. There were lots of inclines and it’s safe to say my calves were burning and then sore for the next couple of days. But the view….oh boy was it worth it. Moores Knob

A day of exercise isn’t complete without fuel (aka FOOD). We visited Village Juice Co. in Winston-Salem and ohhhhhh heavens child. Look at this food:

They get all of their food locally. I ordered a salad, which as you can see above had — chicken, rice, sweet potatoes, apple slices, walnuts, and kale. Goodness talk about a meal to get you energized. This place was phenomenal. I highly recommend trying it!

Even after hiking in the Alps, places like Hanging Rock State Park still awe me. There’s nothing like finding nature’s beauty in my own state without having to travel thousands of miles. That’s what makes it even more special.
